How can I make sure that my new Syrian hamster let's me hold him?

My hamster chutney, I have had him a couple of days, wont let me hold him. I have put my hand in the cage but he just acts as if it's not there, and I have tried to stroke him but he just runs off. I make sure that I am slow and careful so I don't scare hum and I am definitely not rough with him. How can he get used to me and me holding him without biting?
